LAMB AND CHORIZO STEW

SERVE 4 PREP 10mins cook 3hrs
make ahead . double . it.



1kg boned lamb shoulde, cut into 5cm pieces
1tsp picante
(spicy) smoked paprika
1 tsp olives oil
2 onions, roughly chopped
2 garlic cloves, crushed
1 large chorizo, sliced
1 red capsicum, sliced
2 cups (500ml)chicken, stock
243g can diced tomatoes
1/2 cup (75g) raisins
300g small waxy potatoes, such as kipfler
1/3 cup (55g) almonds, skin on, toasted, chopped


1). rub lamb with paprika. heat oil in a frying pan on medium. cook onion and garlic for 5 mins
stirring. add chorizo and cook in a 5mins until browned. transfer to a heavy based saucepan
on medium heat. add capsicum.
2). cook lamb in same frying pan in batched for 5mins until browned. to a transfer to saucipan.
add stock to frying pan scraping up brown bits. and bring to boil. pour over lamb mixture.
add tomato and simmer. uncovered. for 1/2 hrs stirring occasionally.
3). stir in raisins and pot
much liqatos. simmer for another 1 hr , until lamb is tender. stir occasionally and
cover if tooo
