COATED CHICKEN

SERVE 4 prep 10 mins cook 10mins 1 egg white lightly beaten
1/2 cups (20g) grated parmesan
4/ 180g chicken breast fillet, skinless
400g baby potatoes cut into small cubes
140g frozen peas
good handful of baby spinach
3tsp white wine vinegar
1 1/2 tsp olive o

1). heat grill to medium and line grill pa with foil.
season egg white with a little salt and pepper. tip parmesan onto another plate dip chicken in egg white allowing excess to drain off, then coat with parmasan cook chicken under grill 10c form heat source for 10-12 mins turning golden and cooked

2). . meanwhile boil potato for 10mins adding peas for final 3 mins then drain toss vegetables with spinach vinegar and oil. season to taste. divide between four warm plates and serve topped with chicken.
